Why dates

Where good dates come from.

Medjools grow in heavy clusters on date palms like these — sun-ripened, picked, and dried in the desert heat. Ours are folded in whole. That’s the whole sweetener.

The tradition

Good dates make good cake.

Dates have been on the table in the last weeks of pregnancy across many cultures for centuries. Due Dates began inside that tradition — and outgrew the occasion. Whole Medjools do the sweetening in every bake, so most orders now have nothing to do with a due date at all.

Inside a Medjool

One fruit, one pit, nothing else.

Caramel-dense flesh around a single pit. Pitted by hand in the kitchen, folded in whole — the fruit is the sweetener, the moisture, and most of the story.

1Picked ripe

Medjools are left on the palm until they’re dense and caramel-dark, then picked and dried in the sun.

2Pitted by hand

Each date gives up one pit. What’s left is all fruit — no added sugar has to follow it into the bowl.

3Folded in whole

The fruit goes into the batter whole, so every bake keeps the deep, toffee-like sweetness of the date itself.
